This cookbook was originally published in French as Fes Vu Par Sa Cuisine; the year was 1956, when Morocco gained its independence from France. French-born author Zette Guinaudeau, who had been living in Morocco for some 30 years, devotes a substantial portion of the book to techniques, implements, ingredients and spice mixtures, placing the cuisine in a context of customary practices, folk beliefs, and social traditions.
